I Contadini's Artichoke paté is made with Violet-type artichokes. It is a very special indigenous variety of artichoke. Its name derives from the particular purple color that the artichoke assumes towards maturation. Cultivated starting from October, the harvest begins in March and ends at the beginning of June. The violet artichoke is then harvested and processed manually and delicately, within 24 hours. I Contadini pate is produced simply using natural ingredients: artichokes and extra virgin olive oil. The result is an amazing condiment for croutons, pastas, bruschetta.
