Pate of black olives from Puglia by I Contadini

Made with Leccine and Celline olives, typical of Puglia. These varieties of olives are harvested between October and November, immediately given by the olive farmers on the farm (I Contadini). Wash and amarise in water and salt for about 6 months using a method that is therefore natural and very traditional. The olives are then processed to extract the pulp from which this wonderful paté made up of both varieties (Leccine and Felline) is obtained. The right mix between the two types of olives gives a perfect balance of taste and color. The paté is put into pots, obviously using extra virgin olive oil. Use it for your bruschetta, canapés, combined with a tasting of hard aged cheeses or to flavor your pasta.
