From the most tender tops of a typical Salento variety, turnip tops are harvested and processed in amno. October is the month in which the cultivation of turnip greens begins, which is divided into several phases from December to March. Immediately after harvesting, the turnips are cleaned, taking care to remove the hardest parts. The tops are then blanched and finely ground with extra virgin olive oil.
