IN THE VINEYARD: Little use of chemistry using preferably cover products to combat the main vine ampelopathies, weed mowing, no irrigation and no fertilization.
HARVEST: Drying of the grapes on the plant, hand-picking in plastic boxes with careful selection of the bunches, transport by truck with isothermal box.
IN THE CELLAR: De-stemming by hand, sorting table, soft crushing of the grapes, maceration in 600 lt French oak barrels, must skin contact for two weeks, grape marc cap temperature control (Max T. 23-25°C), 4 fullings by hand, per day. After racking 24 hours in steel to remove the coarser lees and immediately in French oak barrels. Pressing of the marc by hydraulic vertical press with stainless steel cage. Daily batonnage until the first racking. After about 9 months of maturation in wood, the wine without the aid of clarifying agents and without tartaric precipitation is bottled and after about 9 months of refinement is released for consumption.
